Apple pie is as American as it gets.

 

Preheat oven 450°

Apple Pie Filling:

In a large bowl combine:

  • Peel, core, and slice 5 to 6 Cups of Apples

Sprinkle over apples and stir:

  • 1 Tablespoon of lemon juice

Combine the following and sift over the apples:

  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 - 1  1/2 Tablespoon Cornstarch, to help thicken the juice
  • 1/4 Cup Sugar
  • 1/4 Cup Brown Sugar

Note: If the apples are tart add 1/3 cup more sugar. If the apples are bland tasting add 1 extra Tablespoon lemon juice, 1/2 teaspoon grated lemon rind, 1 teaspoon vanilla. If the apples are dry add 2 Tablespoon of water.

Pie Crust: (Makes 2)

  • 2 Cups of flour
  • 1 teaspoon salt
  • 1/2 Cup of Butter, shredded
  • 6 - 8 Tablespoons of cold water

 Add the water one tablespoon as a time. Combine the above ingredients with a pastry blender.  NOTE: If you don't have a pastry blender a fork will do. Dough will be crumbly. Do not over stir or crust will become hard. The less you work the dough the softer the crust will be. Divide dough into two halves. On a lightly floured board roll out one half of the dough very thin into 12" round or larger than the outside perameter of the pie pan rim.

Line a 9" pie pan with pie dough. Pour apple mixture into bottom crust.

  • 3 tablespoons unsalted butter, cut into small pieces

Dot the top with very small pieces of butter. Roll out the second dough, and place over apples. Folds ends of crust under around the edge of the pie. Use a floured fork to press down the dough around the edges of the crust. Using a knife trim off any extra crust extended over the pan's edge. Prick the top pie crust to create vents for steam.

 

Bake 450° for 10 minutes, and then reduce the temperature to 350°; Bake until done about 35 - 45 minutes until juices begin to bubble and crust is deep golden brown. Let cool at least one hour before serving. Serve with vanilla ice cream or whipped cream.

 

Makes 8 servings.
