Bacon, Onion, Garlic, Baked Potatoes

I love bacon! So I am always looking for ways to use bacon with various dishes. This potato dish can be prepared in the oven or on the grill. I have experimented with this combination doing it couple different ways. Sometimes I forget to take notes on my experiments so the next time I try to recreate the dish I do it a little bit different. I share two versions of this recipe with you. You can not go wrong with bacon, red potatoes and garlic in any form.

 

 
Baked Red Potatoes with Bacon, Onions & Cheese
 

 

 

 

 

 

Onion Bacon Baked Potatoes
 Ingredients for Bacon, Onion, Garlic, Baked Potatoes

Version 1

Bacon, Onion, Garlic, Baked Potatoes

Toss the following in a large bowl:

  • Slice or section Red Potatoes
  • Chop one small onion, aproximate 1/4 cup chopped onion
  • 1 Teaspoon of Garlic Powder
  • Partialy cooked bacon strips cut into 1/4 sections
  • 3 Tablespoons Olive Oil

Season with:

  • Sea salt
  • Freshly Ground Black Pepper

 Pour into a casserole dish or if grilling make a pouch with alluminum foil.

 Bake or grill for 30 - 40 minutes.

 

 

Version 2

Bacon, Onion, Garlic, Baked Potatoes

Chopping Garlic
 Peal and chop garlic cloves

 

Toss the following in a large bowl:

  • Slice or section Red Potatoes
  • Chop one small onion, aproximate 1/4 cup chopped onion
  • Chop 2 - 3 whole cloves of Garlic
  • Partialy cooked bacon strips cut into 1/4 sections
  • 2 Tablespoons Olive Oil

Pour into a casserole dish

Onion Bacon Baked Potatoes

Season with:

  • Freshly Ground Black Pepper
  • 1 package of Lipton Onion Mushroom Soup mix
  • 1/4 Cup water

Cover and Bake 350º for 30 - 40 minutes.

Baked Red Potatoes with Bacon, Onions & Cheese
If your dish does not have a cover you can use foil

I had put the cheese in before baking but it would have been better to wait and add the cheese the last five minutes of baking so the cheese does not burn to a crisp. Either way it was tasty.

Uncover and top with cheddar cheese then recover for five more minutes of baking to allow cheese to melt. Serve hot.
