Banana Bread

Baking Tip: The secret to good tasting banana bread is in the bananas; the more ripe the bananas the better tasting the bread.

Money Saving Tip: Look for the browning bananas at the grocery store offered at a lower price to save money just for the purpose of making banana bread.

Freezing Tip: Quick breads freeze well so you can cook up several loaves at once and store in the freezer until needed.

Banana Bread Recipe

Preheat oven 350°Banana Bread Loaves

(makes one loaf)

Grease and flour one loaf pan

Cream together in a bowl the following ingredients:

  • 3/4 Cup Sugar
  • 1/2 Cup Butter
  • 1 egg
  • 1 tsp Vanilla
  • pinch of salt
  • 1 teaspoon baking soda

Mash two ripe bananas then add to creamed mixture above

Add flour with minimal stirring. (Do not activate the glutten in the flour. See note about dough)

  • 1 3/4 Cup of Flour

Pour into greased and floured loaf pan.

Bake aproximiately 1 hour.  To test for doneness insert a toothpick. If it comes out clean the bread is done. If soft batter sticks to the toothpick give it another 5 - 10 minutes. Cool on a wire rack. Banana bread is very soft when fresh out of the oven so if you cut it right away it tends to fall apart. It slices best the next day but my family cannot resist warm banana bread so we just give 30 minutes to an hour before we start eating it.

Baking Tip: Darker pans cook hotter and faster than shiny pans so you may have to watch the last 10 minutes to be sure you do not over cook.
