Blueberry Puff Pancake

This breakfast dish is called a pancake but it is much more like a custard because it is made with a dozen eggs. It can be made with your choice of fruits; 1 - 2 cups chopped dried fruits, raisons, fresh or frozen blueberries, blackberries or other berries, apple slices, or peaches.

  1. Place fruit in a 9" x 13" pan or actually any large pan with sides no higher than 1 - 3 ".
  1. Place 3/4 cup of butter or margarine in the pan with the fruit
  1. Place pan in the oven at 400° to melt the butter. (Check often so you do not scorch the butter)

Blueberry Puff Pancake

While the butter is melting, using a wire wisk or a blender whip together the following:

  • 12 Eggs
  • 2 Cups Milk
  • 1/2 Teaspoon Salt
  • 1 Tablespoon Brown Sugar or Honey
  • 1 Teaspon Vanilla extract
  • 2 Cups Whole Wheat Flour

Stir thoroughly until very smooth and well blended. Pour into the baking dish over the fruit and butter. Bake 10 minutes at 450°; then turn down the temperature to 350° for 10 more minutes.

Preparation Tip: If you use dried fruits, cover with hot water in a pan. Let it sit for 10 - 15 minutes or until soft.
