Cheezy Chicken Bake

This great tasting dish is a satisfying meal for a large crowd. It has become one of our family favorites. It can feed 8 - 12 people and even tastes great as a left over next day. It is a complete meal with rice, vegetables, meat, cheeze, and crackers.

 
 

 

Cheezy Chicken Bake Recipe

Prepare Chicken Breasts

Prepare Chicken 4 to 6 Breast halfs by placing frozen or fresh meat in a large pot of water. Bring to a boil. Takes about 10 minutes for water to come to a boil. Then cover and turn down heat to a low simmer for 2 1/2 to 3 hours. After chicken is cooked. Drain water then, then debone the chickenand cut up. You may be able to pull it apart because it should be tender enough.

Cooking Tip: I usually start the chicken around lunch time or shortly thereafter so the meat will be ready for me at dinner time. The slow cooking makes the meat tender.

 

Prepare Rice

Before we can put this dish together we must cook the rice. I use long-grain rice that has been thoroughly rinsed to wash out the access starch. You can watch a video of rice preparation on this page. Measure 1 part rice to 2 parts water. For the size casserole in this recipe I use 3 cups of rice in a pot of six cups of water. Bring water to a full boil, then add the rice, a tablespoon of butter, and sprinkle with salt (to soften the water.) It is important to cover and turn down the heat to a low setting. Once all water is absorbed the rice is done. Takes about 20 - 25 minutes.

 

Prepare Cheeze Crackers

Crush one box of Cheeze Nip or any brand of cheddar cheeze crackers, set aside.

 

Prepare Sauce Mix

Mix the following in a bowl:

  • 2 cans Cream of Mushroom with Roasted Garlic
  • 1 can milk
  • 1 Large Serving spoon of Mayonaise

 
 

Layer the following items in a large 9" by 12" casserole dish in this order:

        ( the first item is the bottom layer, the last item on this list it the top layer)

  • Mixed Vegetables (broccoli, cauliflour, carrots) 16 oz. frozen bag (no need to thaw)
  • Cooked and chopped chicken
  •  Spoon cooked rice and level with back of spoon
  • Spread Mushroom Sauce over entire length of dish
  • Spread Crushed Cheeze Crackers
  • Top with Shredded Cheddar Cheeze

Bake 350° 30 - 40 minutes. Serve hot.
