Guacamole Dip
This dish can be a great evening snack or light summer lunch. It is also a welcome dish to take to events.
Shopping Tip: When selecting good avacodos give them a gentle squeeze. If you are making the dish same day or next day choose a slighty soft avacado to get them ripe. If it will be a few days later that you make this dish choose a firmer one.
To make the Avacado Mix Combine these ingredients:

In a 9" x 12" glass dish layer the following in this order:
(first item is the bottom layer, last item is top layer)
- Chopped Green, Yellow, Orange, & Red Bell Peppers (mixed) about 1/2 cup of each
- 1 whole chopped Onion
- 2 - 3 chopped Tomatoes
- Large can of Refriend Beans
- Layer of shredded Cheddar Cheese ( I like to seperate the cheese from the tomatoes)
- Avacado Mix (from above)
- Sour Cream (I put this on top because it makes the dish more inviting. The brown beans or green avacado mix is not as inviting but still tasty layers)
- Sprinkle with Paprika (to make it prettier)
Serve with Tostitos Corn Chips
either the Crispy Rounds or the Scoops.
