Guilt Free Zucchini Brownies

Love chocolate but want to avoid the sugar? Then this is the brownie for you. No sugar, no artifical sweeteners, made with zucchini. You can indulge in the great taste of chocolate without feeling guilty. Brownies are sweetened with unsweetened applesauce. These brownies are moist and fudge like. First time I made them they were eaten up the same day.

Zucchini Brownie Recipe

Preheat over 350º

Shredd 2 Cups of Zucchini. Generously grease glass pan with olive oil. I use a pastry brush to oil pan.

 

Combine the following wet ingredients in a medium mixing bowl:

  • 2 Cups Unsweetened Applesauce
  • 1/2 Cup Coconut Oil or Olive Oil
  • 1 Large Egg
  • 1/4 Cup of water NOTE: If your zucchini is very wet you might need to reduce your water to 3 Tablespoons.
  • 2 Cups of shredded zucchini Pan of Guilt Free Brownies
  • 2 teaspoons vanilla

In a separate bowl mix the dry ingredients:

  • 1 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1 teaspoon salt
  • 1/2 Cup of Cocoa Powder
  • 2 Cups of flour

Option Ingredient:

  • Add 1/2 cup of chopped walnuts

Add the dry ingredient in with the wet ingredients. The mix should be kind of thick but not as thick as cookie dough. If too thick add a tablespoon or two of water.  Pour batter into well greased glass dish. Use the back of the spoon to spread the batter evenly.

 

Bake 350° 30 - 35 minutes.

Test for doness with your finger. If dough springs back it is done. If your finger leaves and impression it is not done. Bake an additional 5 minutes. Check doness with a tooth pick. If it comes out clean it is done. If the toothpick comes out with dough on it cook 2 - 3 more minutes. Remove from oven. Place pan on a cooling rack. While brownies are still hot sprinkle 1/2 Cup of mini unsweetened chocolate chips over the top. They may melt slightly into the brownies. Let the brownies cool some before cutting.

Store brownies in an airtight container. Best consumed within two days. May be kept in refrigerator to keep longer.
