Italian Fajitas

I called it that because this Fajitas has a spicy taste that reminds me of what you might find in Italian cooking. They say that neccessety is the mother of invention. Well the summer garden was yeilding more tomatoes than I knew what to do with thus the creation of this recipe. When I cook up more than my husband and I can eat I wrap them and store in the freezer. It makes another interesting lunch for my husband to take to work. The fresh tomatoes breakdown and help to create a sauce that I season and thicken.

 
Italian Fajitas
 

Instructions for making Italian Fajitas

  • Cook a pound of Sausage, drain, and set aside
  • Slice a Yellow squash and a Zucchini of the same size
  • Sautee the Squash & Zucchini in Tablespoon of butter (Do not over cook)

In a separate frying pan

  • Sautee in olive oil chopped bell peppers (any color) and onions
  • Add fresh chopped tomatoes and cook a little more

Season With:

  • 1 Tablespooon of Garlic Powder
  • 1 teaspoon Oregano
  • 1 teaspoon Celery Seed
  • 1 pinch of Chili Powder

To Flavor the sauce:

  • Add 2 Tablespoons of Molasses

To Thicken the sauce:

  • Mix equal amounts of Water and Corn Starch ( 1 - 2 Tablespoons)
  • Then stir into above sauce and vegetable mix

Add the Meat

  • Add the pre-cooked sausage and stir

  • Now the mixture is ready to place on flat torillas

Putting it all together:

  • Lay out a flat soft tortillas (We prefer the whole wheat flour tortillas)
  • Place some sauce & vegetable mix in center
  • Top with a few slices of squash & zucchini
  • Top that with shredded mozerella cheeze
  • Secure with a toothpick
  • Serve hot or wrap in celophane for freezer

The yellow squash and zucchini that you have left over can be served as a side dish
