Best Sweet Potato Casserole
Best Sweet Potato Recipe I ever had. Not sure if it was the recipe or the fact that I used my own home grown sweet potatoes for this recipe. I do like this recipe because it is not overly sweet like so many other sweet potato recipes. My homegrown sweet potatoes were massive in size so I could double this recipe with just one single potato.
Preparation Tip: Peel and cut up fresh garden sweet potatoes. Steam the sweet potatoes in a steamer until a fork inserts into them easily.

Steam the sweet potatoes

Sweet Potato Casserole Recipe
Mix in a large bowl the following:
- 4 Cups of steamed, mashed Sweet Potatoes
- 1 Stick of softened butter, 1/2 Cup
- 1/3 Cup Brown Sugar
- 2 Eggs, lightly beaten
- 1 teaspoon Vanilla
Pour the above mixture into a 9" x 9" square casserole dish

Crumb Topping
Combine the following in a small bowl:
- 1/2 Cup Flour
- 1/2 Stick of butter (1/4 Cup) grated into flour
- 1/3 Cup Sugar
- 1/3 Cup Crushed or Chopped Peacans or Walnuts
Spread the crumb mixture over the sweet potato mixture. Bake 350º for 30 minutes. Longer for a double batch.
