Zucchini Bread


Zucchini bread is one of my families favorite quick breads. This recipe makes two moist loaves of Zucchini Bread which can be an addition to any meal or used as a snack in between meals any time day or night. I like to add raisons but the family prefers is plain. You can also cook up extra loaves and freeze them for later use when you know you have company coming.


Zucchini Bread

Even if your family does not like squash or zucchini they will likely love this bread anyway. Shred 2  medium zucchini per recipe.


4 zucchini for 4 loaves 
Zucchini Shredded
Shred or run through a food processor

Zucchini Bread Recipe

Preheat oven to 350°

Mix the wet ingredients with a mixer:Zucchini Bread with Creamed cheeze

  • 1 1/2 cup of Sugar
  • 1/2 cup Brown Sugar
  • 1/4 cup Crisco Shortening
  • 1/4 cup Butter
  • 4 eggs
  • 2 teaspoons Vanilla
  • 1 Tablespoon Lemon Juice

In a separate bowl mix the dry ingredients:

  • 2 cups Flour
  • 1 cup of whole Wheat or Rye Flour
  • 2 teaspoons of Baking Soda
  • 1 teaspoon of Baking Powder
  • 1 1/2 teaspoon of Ground Cinnamon
  • 1/2 teaspoon of Ginger spice

Add the dry ingredients into the wet ingredients. Using a large spoon make a few careful stirs to combine the wet and dry mixes. Do not overstir or you will activate the gluten in the flour making your bread hard. Just before almost combined add:

  • 2 cups of shredded zucchini (about 2 medium sized zucchini)
  • 1/2 cup of water
  • 1/2 cup of raisons (optional)

Only mix with a few swift strokes so as not to activate the gluten. See my note about gluten on the cookie page if you do not understand what I am talking about. Pour batter into two greased and floured loaf pans. Bake about 1 hour or until tooth pick inserted comes out clean.

Zucchini Bread Loaves

Freezing Tip: Cool the bread completely before freezing. You should never take warm food and store directly into the freezer because that can cause bacteria to grow. Tightly wrap with two layers of celophane plastic wrap. Label with a permanent marker so you can distinguish it from Banana Bread.
